Why air fryer baskets peel — and what to do about it

A flaking basket is a wear problem, not a scandal. Here is what causes it, what the evidence says about safety, and when to stop using it.

The direct answer

Nonstick coatings are a wear surface, and years of heat, scratches, thermal shock and aerosol spray residue eventually break the bond to the metal underneath. A basket that is visibly flaking should be replaced — not because swallowing a fleck of PTFE is acutely dangerous, since food-safety agencies consider it inert and it passes through the body, but because a compromised surface only gets worse and there is no reason to keep eating it.

A peeling basket is one of the more upsetting things to discover in a kitchen, and the internet is not helpful about it — you will find pages telling you it is harmless and pages telling you it is a health emergency. The honest position sits between those, and it is reasonably well documented. Here is what is actually happening, why, and what to do.

What the coating is and how it fails

Most air fryer baskets are aluminium with a PTFE-based nonstick coating bonded to the surface. That bond is the weak point, not the coating itself. It degrades from four things in combination: heat cycling, which expands and contracts the metal and coating at slightly different rates thousands of times; mechanical damage, mostly from metal utensils and abrasive scrubbing; thermal shock, from cold water hitting a hot basket; and residue build-up, particularly the polymerised film that aerosol cooking sprays leave behind, which grips the coating and lifts it when you eventually scrub it off. Once the bond breaks anywhere, the flaking spreads from that point.

Is it dangerous? The honest answer

The evidence-based position: PTFE is chemically inert and biologically inactive at room and cooking temperatures, and food-safety agencies authorise it for cookware. If a fleck comes off into your food, it is not absorbed — it passes through. That is the reassuring half, and it is genuine.

The other half: a peeling basket is a basket whose surface is failing, and it will keep failing. You are also cooking on exposed aluminium wherever the coating has gone, which sticks badly and reacts with acidic food. And the specific hazard that is real with PTFE — thermal decomposition releasing fumes above roughly 500°F — is not a peeling issue, it is an overheating-an-empty-pan issue, and it is covered properly in are air fryers toxic. The five habits that cause it

1. Aerosol cooking spray. The biggest single cause, and the one almost nobody knows about. Commercial sprays contain propellants and anti-foaming agents that bake into a sticky brown film at air-fryer temperatures. That film does not wash off easily, so people scrub — and the scrubbing takes the coating with it. Several manufacturers warn against aerosol sprays specifically for this reason.

2. Metal utensils. Tongs, forks, metal spatulas. One scratch is a starting point for delamination. Silicone or wood only, permanently.

3. Cold water on a hot basket. Rinsing straight after cooking is the most natural thing in the world and one of the worst things for the bond. Let it cool.

4. Abrasive cleaning. Steel wool, scouring pads, and gritty powders. Warm soapy water and a soft brush, with a soak for anything stubborn — the routine is in how to clean an air fryer.

5. Dishwashers, sometimes. Even on baskets rated dishwasher-safe, repeated high-temperature cycles with harsh detergent age a coating faster than hand washing. If you want maximum life, wash by hand; if you want the machine to actually get used, use the dishwasher and accept a slightly shorter basket life. That is a legitimate trade and we would not pretend otherwise.

When to replace it

Visible flaking, chips or exposed metal: replace the basket. Not urgent, not an emergency, but do it. Scratches with the coating intact: fine, keep using it, and switch to silicone utensils. Discolouration or staining with no texture change: cosmetic, ignore it. Food suddenly sticking everywhere: usually residue build-up rather than coating failure — a proper degreasing clean often restores it completely.

Check whether your manufacturer sells a replacement basket before replacing the machine. Do coating-free machines solve it?

They solve this specific problem completely, and it is worth being precise about how. Borosilicate glass and stainless steel have no coating at all, so there is nothing to peel — ever. Food sticks more without a little oil, which is the honest trade. PFAS-free ceramic is still a coating and can still wear; what it avoids is the PTFE and PFAS chemistry rather than the wear mechanism, and in practice ceramic often wears somewhat faster than PTFE, just more benignly. If a machine that never needs a replacement basket is the goal, glass or stainless is the answer, and both are ranked in the non-toxic roundup.

What to do today

If your basket is flaking: stop using it, order a replacement basket for your model if one exists, and if it does not, treat it as a machine-replacement decision rather than a health scare. If it is not flaking yet: throw away the aerosol spray, switch to silicone utensils, let the basket cool before washing, and you will very likely get years more out of it than you otherwise would.
