Air fryer cooking times: a starting-point chart, not a promise

Times and temperatures for the food people actually cook, with the honest caveat that every machine differs — plus the conversion rule for oven recipes.

The direct answer

To convert an oven recipe: drop the temperature by about 25°F and cut the time by roughly 20%, then check early. Most air-fryer crisping happens between 380°F and 400°F. Always cook to a safe internal temperature for meat rather than to a clock.

Before the chart, the caveat that makes it useful: these are starting points, not measurements we took. We do not have a test kitchen and we are not going to pretend the numbers below came out of one. They are compiled from manufacturers' own quick-start charts and manuals, and they are a sensible place to begin — but the right time for your food in your machine will differ, sometimes by several minutes.

That variance is real and worth understanding. Air fryers differ in wattage, basket size and how close the food sits to the element. A 1,750-watt machine with a shallow basket browns faster than a 1,400-watt one with a deep drawer. Food thickness, how much is in the basket, and whether it went in frozen or fridge-cold all move the number as much as the machine does. Treat the chart as a first guess and check.

Converting an oven recipe

The working rule is 25°F lower and about 20% less time. An air fryer is a small convection oven, and convection cooks faster than static heat because moving air strips away the insulating layer of cooler air that sits against food. The small chamber intensifies that further.

In practice, apply the conversion and then check at around 60% of the adjusted time. Air fryers go from “not quite there” to “too dark” faster than an oven does, and the penalty for looking early is nothing — especially on a machine with a window, where looking costs no heat at all.

Cook to temperature, not to time

For anything where safety is involved, the clock is the wrong instrument. USDA safe minimum internal temperatures are the standard: 165°F for all poultry, 145°F for whole cuts of beef, pork, lamb and fish (with a rest), and 160°F for ground meats other than poultry. A cheap instant-read thermometer removes all the guesswork and is the single best accessory you can buy for an air fryer. Times in any chart, including ours, are there to tell you when to start checking.

Why your times will drift from the chart

Quantity. More food in the basket means more moisture released and more mass to heat, so a full basket takes longer than half a basket of the same thing — and if it is piled rather than layered, it may never crisp at all. That is the first cause in our not-crisping guide.

Starting temperature. Food straight from the freezer needs several minutes longer than the same food from the fridge, and fridge-cold needs longer than room temperature.

The machine itself. Wattage, basket depth and fan design all vary. Once you have cooked something two or three times you will know your machine's offset from a generic chart — write it on a note inside a cupboard door and stop looking things up.
