Glass vs metal air fryer baskets

A glass container has no coating to worry about and no coating to wear out. It also conducts heat far worse than aluminium, and that shows up on the underside of your food.

The short answer

Metal browns better, holds more and weighs less. Glass wins on materials — nothing coated touches the food, ever — plus you can see the cook, and the container doubles as storage. Choose glass if the coating question is why you are shopping, or if you cook for one or two and like taking the food straight to the fridge in the vessel you cooked it in. Choose metal for everything else, especially chips for four.

For years the only choice in this category was which coating you wanted on your metal basket. Then glass machines arrived — the Ninja Crispi being the one most people mean — and changed the question from “what is the basket coated with” to “why is there a coated basket at all.” It is a genuinely different design rather than a variation, and it comes with genuinely different results.

The physics, briefly, because it explains everything else

An air fryer browns food two ways at once: hot circulating air hitting the surface, and conducted heat from whatever the food is resting on. Aluminium is an excellent conductor, so a metal crisper plate gets hot fast and contributes real browning underneath. Borosilicate glass conducts heat poorly by comparison, so it contributes far less. The air-driven browning on top is identical; the contact browning underneath is not.

In practice that means chips and other foods that want a crisp bottom come out slightly better from metal, and glass rewards a shake or a flip more than metal does. It is not the difference between good and bad food — it is the difference between very good and very good with an extra minute. Everything else about the glass design is upside.

The case for glass

The materials argument is the strong one, and it is structural rather than chemical. Every coating claim on the market — PFAS-free, ceramic, PTFE-free — is a claim about a substance that is present. Glass removes the substance. That is why the Crispi ranks where it does in our non-toxic air fryers roundup, above machines with perfectly good PFAS-free ceramic, and why it is the machine we point at when someone says they simply do not want a coating in the house. Ninja’s own description of the CleanCrisp glass containers is that they are for cooking and storing without the forever chemicals PFAS and PTFE.

The second argument is quieter and, for a lot of households, more persuasive day to day: the thing you cooked in is the thing you store in and reheat from. A 1,500-watt PowerPod that clamps onto a glass container, with Recrisp as a named function, is a very good answer to the way people actually eat — cook, refrigerate, revive. The case for metal

Capacity, browning and price, in that order. A 5-quart metal basket does a family’s chips in one go for well under a hundred dollars; the glass format is built around one or two portions and costs more per quart. Metal is lighter to lift with food in it, and it does not care if you knock it against the sink. And a coated basket that is looked after — no aerosol sprays, no metal utensils, washed before residue carbonises — lasts years, as we set out in how long do air fryers last.

If your objection to metal is specifically the PTFE family rather than coatings in general, there is a middle road: PFAS-free ceramic over metal keeps the conduction and drops the fluoropolymer. What that claim does and does not mean is in are ceramic air fryers safe.

What about glass-doored ovens and windows?

Worth separating, because the words overlap. A glass machine cooks food inside glass. A window air fryer has a glass panel you look through while the food sits in a metal basket — a visibility feature, not a materials one, and a good one. If seeing the cook is what you actually want, the window field is ranked in best air fryers with a window, and it costs a lot less than switching format.

The verdict

Metal for most kitchens, glass for a specific and entirely defensible set of priorities: coating-free by design, cook-and-store in one vessel, one or two people. The mistake would be buying glass expecting better chips — that is not what you are buying. You are buying a machine with nothing in the food path to think about, which for a lot of people is worth more than the last ten per cent of browning. What we did instead: compiled the published specifications — wattage, capacity, materials — worked out what each machine actually costs to run at the national electricity rate, read the manuals and owner reviews, and scored each one against a published rubric. Do glass air fryers cook as well as metal ones?
Almost. The air-driven browning on top is the same; the contact browning underneath is gentler, because borosilicate glass conducts heat far less readily than aluminium. Foods that want a crisp base — chips especially — benefit from an extra shake or an extra minute in glass.
Is a glass air fryer safer than a coated one?
It removes the coating from the food path rather than reformulating it, which is a stronger position than any PFAS-free claim. That is a materials preference rather than a safety correction: regulators consider PTFE coatings safe at air-fryer temperatures, as covered in are air fryers toxic.
Can the glass container break in an air fryer?
Borosilicate is made for thermal shock and handles the heat without drama. What it will not survive is being dropped, or going from freezer to a hot appliance. Treat it like good ovenware rather than like a metal basket you can throw in the sink.
Is a glass air fryer big enough for a family?
Not really. The format is built around one or two portions — a 4-quart container plus a 6-cup — and a family of four will be cooking in stages. If capacity is the constraint, the family-sized field is in best large air fryers and best dual-basket air fryers.
Is a window air fryer the same as a glass air fryer?
No. A window machine lets you watch food cook in a normal metal basket; a glass machine cooks the food inside glass. If visibility is what you want, the window models are cheaper and ranked in best air fryers with a window.
