Rotisserie is the rare countertop feature that is not a saved dial position. A spit turns the food continuously through the airflow, which does two things a basket cannot: it self-bastes, because rendering fat runs back over the surface instead of dripping away in one direction, and it browns evenly all the way round without anyone opening the door to turn anything.

There is a second, less advertised use that we think is better than the chicken. Most rotisserie machines ship with a tumbling basket that clips onto the same spit — put chips or nuts in it and the machine shakes them for you, continuously, for the whole cook. Uneven chips are almost always a shaking problem, as we say in air fryer not crisping, and this is the only hardware answer to it.

The catch is format. Every rotisserie machine is an oven-style air fryer, because a spit needs a cavity with a door and two bearing points. What a rotisserie is actually good at

Whole birds, first and obviously: a chicken on a spit self-bastes because rendering fat runs back across the skin as it turns, and it browns evenly without anyone opening the door. Pork loin, gyros-style stacked meat and kebabs work for the same reason. Anything with fat to render and a shape you can skewer through the middle is a candidate.

The tumbling basket is the underrated half. Chips, nuts, roasted chickpeas and anything else that needs constant agitation come out visibly more even than they do from a basket you shake twice. If you are buying a rotisserie machine mainly for chicken, you will end up using the basket more.

What it is not good at

Anything you cannot skewer or tumble — fish, delicate vegetables, anything battered. Anything heavy enough to strain the motor, which is why manufacturers publish weight limits for the spit and why you should read them. And anything you want maximally crisp: an oven cavity moves air more gently than a basket sitting directly under a fan, so a rotisserie machine will not out-crisp a good basket machine on chips cooked flat. Check that the spit set is complete

The single most common disappointment with these machines is discovering the rotisserie needs an accessory that did not come in the box. A complete set is the spit rod, two forks with thumbscrews, a removal handle or lift tool, and ideally the tumbling basket. Electrical and clearance, because these are big machines

Most of this group draws 1,700 to 1,800 watts, which at 120 volts is 14 to 15 amps — the whole nominal capacity of a standard kitchen circuit.
