Four quarts is the sweet spot for a small kitchen, and this is the small machine that behaves like a full-size one — with a manufacturer honest enough to tell you what the basket is coated with.

Small air fryers usually feel like compromises: a dial, a fan, a basket, and a sense that the manufacturer stopped caring below five quarts. The Vortex Plus Mini is the exception in our compact roundup, and the reason is that Instant did not strip the feature set to hit the size — it shrank the machine and kept the machine.

Instant publishes an adjustable temperature range of 95 to 400°F, EvenCrisp airflow — which it describes as delivering the crunch and tenderness of deep frying with 95% less oil — a touchscreen that displays each stage of the cook, and little-to-no preheating time. The 95°F low end is the specification worth noticing: it is low enough for proofing and dehydrating, which most machines at this size cannot do at all.

It is also, in our view, the most honest machine in this review set on the question everybody is asking, and not in the way you might expect. Instant discloses that its nonstick food-contact surfaces contain PTFE, and states plainly that PTFE and its relatives are classified as PFAS substances and must be disclosed. That is a company following the rules properly instead of finding a form of words.

Four quarts, and what it really holds

Four quarts is two portions of chips in a single layer, two chicken breasts, a tray of vegetables for two, or a couple of pieces of fish. That is a complete dinner for one or two people and half a dinner for four. An air fryer only cooks properly in a single layer — piling food up is the most common cause of the complaint we answer in air fryer not crisping — so the capacity figure is a hard ceiling rather than a guideline.

The 95°F floor is the specification to buy on

Compact machines almost always start at 200°F or higher, which limits them to cooking. Instant’s 95°F low end turns this into a proofing box for dough and a genuine dehydrator for fruit, herbs and jerky. On a machine this small that is a meaningful expansion of what it is for, and it is a specification that several much larger and more expensive machines do not match.

EvenCrisp, and the oil claim

Instant’s EvenCrisp is its airflow design, and it publishes the claim that comes with it: the crunch and tenderness of deep frying with 95% less oil. The coating disclosure, and how to weigh it

We rate Instant’s transparency highly and would rather you knew what it says than found out later: its nonstick food-contact surfaces contain PTFE, and its disclosure language notes that PTFE, PFA and FEP are classified as PFAS substances and must be disclosed. Nothing about that makes this machine unsafe — food-safety regulators consider PTFE coatings safe at the temperatures air fryers reach, and we lay out the evidence in are air fryers toxic.

But if avoiding the PFAS family is your actual reason for shopping, this is not your machine, and we are not going to bury that in a footnote. Against the Chefman, which is the real comparison

Living with a small machine

The compact size is an active advantage in one specific way: clearance.
